Josh Wheeler is one of the best bakers in the country who quietly turned his COVID food van start-up into a cool, clean, modern bakery and food store in the heart of Shepp. Long, slow ferments create rich, complex flavours, from his sourdough loaves to buttery croissants. 

Start the day with a coffee and a gruyere and Bundarra Berkshire ham croissant. Take some sourdough doughnuts for morning tea, a chicken salad-filled bagel for lunch and a few loaves of exceptional sourdough for home. 

 

Josh scours the landscape for seasonal products and uses locally harvested pistachios and hazelnuts in his pastries. He also uses and stocks milk from How Now Dairy in Numurkah, and dairy and pasture-fed eggs from Organic Ways Dairy Farm pasture raised in Mundoona.
